Black pepper is made by harvesting the green peppercorns before they are ripe. These are then dried in the sun for several days. These green peppercorns start to get a wrinkled appearance and get their final colour, becoming black peppercorns. The peppercorns are then sorted and graded. The powerful flavour of the black peppercorns can be brought out by grinding them at the last minute.
